|Molasses||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Seedless raisins||1 Cup (16 tbs), chopped|
|Walnuts||3⁄4 Cup (12 tbs), chopped|
|Sifted all purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Mixed cake spice/Mixed nutmeg and cinnamon||1 Teaspoon|
|Cold coffee/Milk||1⁄4 Cup (4 tbs)|
Work shortening with back of spoon until fluffy and creamy; add sugar and molasses gradually, while continuing to work with spoon until light.
Then add egg.
Add raisins and walnuts to flour, which has been sifted with soda, salt, and spice.
Add alternately with coffee to sugar mixture.
Drop by rounded teaspoonfuls—about 1 1/2" apart— onto greased or oiled cookie sheet.
Bake in moderately hot oven of 400°F for 10-12 min.
