Easy Lemon Cookies

Ingredients
  Margarine 1 2⁄3 Tablespoon (1 Tablespoon Plus 2 Teaspoons)
  Granulated sugar 2 1⁄2 Teaspoon
  Freshly squeezed lemon juice 1 1⁄2 Teaspoon
  Grated lemon peel 1⁄4 Teaspoon
  Cake flour 6 Tablespoon (1/3 Cup Plus 2 Teaspoons)
Directions

Preheat oven to 300°F.
In small mixing bowl, using electric mixer, combine all ingredients except flour, beating until light and smooth; add flour and beat until flour has been incorporated and mixture forms sticky batter.
Using wet hands, roll batter into 8 small balls (about 1 tablespoon batter for each ball); arrange balls on nonstick baking sheet, leaving about 2 inches between each. Press the balls with the help of fork.
Transfer baking sheet to lowest oven rack and bake until edges of cookies are lightly browned, about 15 minutes; using a spatula, remove cookies to wire rack to cool.
