Classic Peanut Brittle

Ingredients
  Sugar 3 Cup (48 tbs)
  Light corn syrup 1 1⁄2 Cup (24 tbs)
  Salt 1⁄4 Teaspoon
  Shelled peanuts 4 Cup (64 tbs) (salted roasted)
  Butter/Margarine 3 Tablespoon
  Vanilla 2 Teaspoon
  Baking soda 1 Tablespoon
Directions

Generously butter two large baking sheets.
In 3-qt bowl mix sugar, syrup and salt.
Microwave at High 15 minutes, stirring 1 or 2 times.
Stir in peanuts.
Microwave at High 10 to 15 minutes, or until syrup and peanuts are light brown, stirring after 2 and 4 minutes.
Stir in butter and vanilla until butter melts.
Stir in baking soda until light and foamy.
Pour half onto each baking sheet and spread quickly to 1/4-in thickness.
Cool.
Break into pieces.
Freeze in single layer on trays until firm.
Wrap, label and freeze no longer than 6 months.
To serve, unwrap and arrange in single layer on plate or tray.
Let stand at room temperature 15 to 20 minutes.
