Banana Granola Cookies

Ingredients
  Butter stick 4 Ounce, softened
  Solid vegetable shortening 1⁄4 Cup (4 tbs)
  Firmly packed dark brown sugar 1 Cup (16 tbs)
  Mashed bananas 1⁄2 Cup (8 tbs)
  Egg 1
  Vanilla extract 1 Teaspoon
  Banana extract 1⁄2 Teaspoon
  Granola 2 Cup (32 tbs)
  Flour 1 1⁄2 Cup (24 tbs)
  Salt 1⁄2 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon, grated
  Semisweet mini chocolate chips 1⁄2 Cup (8 tbs)
Directions

1. Preheat oven to 400°F. In a medium bowl, beat butter, shortening, and brown sugar with an electric mixer on medium speed until creamy. Beat in banana, egg, vanilla, and banana extract until well blended.
2. Add granola, flour, salt, baking powder, cinnamon, and nutmeg and mix until blended. Stir in chocolate chips.
3. Drop teaspoonfuls of dough 2 inches apart onto lightly greased cookie sheets. Bake 12 to 15 minutes, just until lightly brown. Remove to a rack to cool completely.
