Simple Peanut Brittle
|Sugar||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
|Peanuts||1⁄2 Pound (shelled)|
Combine sugar, water and salt in saucepan, stirring until sugar is dissolved.
Bring to a boil, cover tightly, and boil 3 minutes; remove cover and continue cooking until syrup takes on a rich caramel color (320° F.).
Have peanuts spread out on a 12 1/2" x 19" buttered shallow enamel ware pan, a marble slab, or an enamel kitchen table top.
Pour caramel syrup over the peanuts and let cool thoroughly before breaking in pieces.
Makes about 1 1/2 pounds.
