Cookies With Chunky Almonds
|Butter||1 Cup (16 tbs) (Preferably Unsalted)|
|Sifted sugar||2⁄3 Cup (10.67 tbs) (Firmly Packed)|
|Almond extract||1⁄2 Teaspoon|
|Unblanched almonds||1 Cup (16 tbs), coarsely chopped|
|Sifted all purpose flour||2 1⁄3 Cup (37.33 tbs)|
Cream butter thoroughly, add sugar and flavorings, blend until creamy and smooth.
Add almonds, then flour.
Knead slightly to blend thoroughly.
Divide dough in two equal portions and form into two long rolls about 1" in diameter.
Cut into 3/4-inch lengths.
Roll each piece into 2" lengths between palms of hands.
Place on ungreased baking sheets, turning into a crescent shape.
Bake at 350° F. (moderate) for 20 minutes.
Cool slightly, then roll in sifted confectioners' sugar.
Makes 6 dozen.
