Orange Cookies Goose Fat
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Rendered goose grease||1⁄4 Cup (4 tbs)|
|Sugar||1 Cup (16 tbs)|
|Grated orange rind||2 Teaspoon|
|Egg yolks||4 , beaten|
|Orange juice||2 Tablespoon|
Sift flour, measure and resift 3 times with baking powder and salt.
Cream goose grease, sugar and orange rind.
Add egg yolks and orange juice and beat vigorously until well blended.
Add sifted dry ingredients and stir until well mixed.
Divide into 3 portions.
Roll each portion on a floured board to about 1/8-inch thickness.
Cut with a 2-inch cutter.
Sprinkle with sugar.
Place on a greased baking sheet and bake in a moderate oven (375° F.) for 8 to 10 minutes or until done.
Cool on cake racks.
Makes 5 dozen cookies.
