|Coconut||500 Gram, finely grated|
|Caster sugar||250 Gram|
|Vanilla essence||1 Teaspoon|
Grease a baking tin with butter and set aside. Heat the oven to 350Â°F.
Mix the castor sugar and grated coconut and vanilla esence in a large bowl.
Beat the egg whites with a pinch of salt till stiff peaks rise and gently fold into the coconut-sugar mixture.
Place teaspoons of mixture on the buttered tray leaving space between each teaspoonful and bake till golden brown.
