Lemon Cookie Tarts
|Sifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||3⁄4 Cup (12 tbs)|
|Vanilla extract||1⁄4 Teaspoon|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Melted butter||2 Tablespoon|
|Egg||1 , well beaten|
|Cooked potatoes||1⁄2 Cup (8 tbs), grated|
|Grated lemon rind||2 Teaspoon|
|Lemon juice||4 Tablespoon|
Mix flour and 3 tablespoons sugar together.
Cut in the 3/4 cup butter, then add milk and vanilla mixed together.
Press small amounts of the dough into the bottom and halfway up sides of small tart tins.
Chill while mixing filling.
Combine remaining ingredients and spoon into prepared tart tins.
Bake at 300F for 10 minutes, then increase heat to 375F, and bake 5 minutes longer.
