Vanilla Flavored Peanut Brittle

Ingredients
  Sugar 1 Cup (16 tbs)
  Light corn syrup 1⁄2 Cup (8 tbs)
  Peanuts 1 Cup (16 tbs) (raw)
  Salt 1⁄4 Teaspoon
  Butter 1 Tablespoon
  Vanilla extract 1 Teaspoon
  Soda 1 Teaspoon
Directions

Combine sugar, corn syrup, peanuts, and salt in a 2-quart casserole.
Stir well.
Micro wave at HIGH 8 to 9 minutes.
Mixture will be light brown in color.
Add butter and vanilla.
Blend thoroughly.
Microwave at HIGH 1 to 3 minutes or until mixture reaches the hard crack stage (300°).
Stir in soda quickly.
Pour onto greased slab or cookie sheet.
Let cool at least 1 hour.
Break into small pieces.
Store in airtight container.
