Special K Fruit Cookies
|Sifted regular all purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Soft butter/Margarine||1 Cup (16 tbs)|
|Firmly packed brown sugar||2 Cup (32 tbs)|
|Vanilla flavoring||1 Teaspoon|
|Flaked coconut||1 Cup (16 tbs)|
|Broken walnuts||1 Cup (16 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Cornflour||4 Cup (64 tbs)|
1. Sift together flour, baking powder, soda and salt. Set aside.
2. Beat butter and sugar until light and fluffy. Add eggs and vanilla; beat well. Add sifted dry ingredients, coconut, walnuts and raisins; mix well. Stir in Special K. Drop by level table-spoonfuls onto ungreased baking sheets.
3. Bake in moderate oven (375°F.) about 12 minutes or until lightly browned.
