Almond Fortune Cookies
|Shortening||2⁄3 Cup (10.67 tbs) (part butter)|
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Grated orange peel||1 Tablespoon|
|Vanilla extract||1 Teaspoon|
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Chopped almonds||1⁄4 Cup (4 tbs)|
Cream shortening and sugars.
Add orange peel, vanilla extract and egg and beat well.
Combine flour, salt and baking powder.
Add to creamed mixture and blend.
Stir in almonds.
Fold paper slips with fortunes into small squares and place on bottom of balls of cookie dough.
Place balls on lightly greased cookie sheets and flatten with bottom of glass dipped in sugar.
Bake at 400 ° for 6 to 8 minutes, or until lightly browned.
Remove to wire racks to cool.
