Vanilla Sugar Cookies
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 Teaspoon|
|Shortening||1 Cup (16 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , well beaten|
|Vanilla extract||1 1⁄2 Teaspoon|
1. Heat oven to 400°. Lightly grease 2 cookie sheets. In a mixing bowl, sift or whisk together flour, baking powder, and salt. Cream together the shortening and sugar.
2. Gradually add the eggs and vanilla until evenly combined. Add flour mixture to shortening mixture in two or three additions, mixing only enough to incorporate between additions. Chill about 15 minutes.
3. On a well-floured surface, roll dough out as thin as possible. Cut with cookie cutter. Sprinkle tops of cookies with sugar, then transfer to prepared cookie sheets, spacing at least 2 inches apart.
4. Bake in small batches for about 6 to 8 minutes.
