Crumbly Peanut Cookies
|Plain flour||200 Gram|
|Soda bicarbonate||1⁄2 Teaspoon|
|Unsalted butter||100 Gram|
|Muscovado sugar||75 Gram|
|Unsalted peanuts||75 Gram, roughly chopped|
|Chocolate fudge||60 Gram, chopped|
|Vanilla extract||1 Teaspoon|
Preheat the oven to 180°C/350°F/Gas 4.
Silt together the flour and bicarbonate of soda in a large bowl.
Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.
Stir in the sugar, peanuts, and fudge.
Lightly beat together the egg and vanilla and add to the mixture in the bowl.
Mix the ingredients together to make a firm dough.
Put 24 spoonfuls of the dough on a lightly floured baking sheet, pressing down on each one with the back oi a fork.
Bake for 10-12 minutes, or until pale golden.
Cool on a wire rack.
