Gumdrop Oatmeal Cookies
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Uncooked oats||1 1⁄2 Cup (24 tbs) (Quick Cooking / Regular)|
|Gumdrops||1⁄2 Cup (8 tbs), finely cut|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Flaked coconut||2 Tablespoon|
Combine flour, baking powder, soda, and salt into bowl.
Add shortening, sugars, egg, water, and vanilla extract.
Beat until smooth, about 2 minutes.
Lightly stir in oats, gumdrops, and pecans.
Shape dough into small balls: roll each in coconut.
Bake on greased cookie sheets at 350° for 12 to 15 minutes.
