|Whole wheat pastry flour||16 1⁄3 Ounce (2 Cup Plus 2 Teaspoon)|
|Ground ginger||1⁄4 Teaspoon|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Safflower oil||1⁄4 Cup (4 tbs)|
|Molasses||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Applesauce||1⁄2 Cup (8 tbs) (2 Teaspoon Lemon Juice / Vinegar Can Be Added)|
Combine flour, spices, salt, and sugar in a mixing bowl.
Combine honey, oil, and molasses.
Stir into flour mixture.
Stir baking soda into applesauce.
When it foams, stir into flour mixture.
The batter should be firm enough to use a teaspoon to drop onto cookie sheet.
The appearance should be dry.
(Since the consistency of applesauce varies, it may be necessary to add more flour.) Using two teaspoons, drop dough onto a greased cookie sheet.
Bake at 350° about 15 minutes, or until tops are firm to the touch.
Remove to a wire rack to cool.
