Apple Cookie Ice Cream Squares
|Fat free apple fruit chewy cookies||22|
|Low fat vanilla ice cream||3 Cup (48 tbs), softened|
|Ground cinnamon||1 1⁄2 Teaspoon|
|Fat free caramel sundae syrup||6 Tablespoon|
1. Place 16 cookies in a food processor, pulse until coarsely ground. Spoon cookie crumbs into an 8-inch square baking pan, lightly coat hands with cooking spray, and press cookies firmly into bottom of pan.
2. Combine ice cream and cinnamon in a bowl. Spread ice cream mixture over cookie crust in pan.
3. Place remaining 6 cookies in food processor, and pulse until coarsely ground. Sprinkle cookie crumbs over ice cream mixture, cover and freeze until firm. Cut into 9 squares. Drizzle each serving with 2 teaspoons caramel syrup.
