Orange Filled Cookies
|Basic refrigerator cookie dough||1 Cup (16 tbs), adjusted|
|Orange juice concentrate||1 Tablespoon, thawed|
|Sifted powdered sugar||1 Cup (16 tbs)|
|Butter/Margarine||2 Tablespoon, softened|
|Orange juice concentrate||5 Teaspoon, thawed|
Prepare Basic Refrigerator Dough blending the 1 tablespoon orange concentrate in with egg and vanilla.
Shape in two 6-inch rolls.
Wrap in clear plastic wrap.
Remove one roll at a time from refrigerator.
Cut in very thin slices; place, on un-greased cookie sheet.
Bake in 375° oven for 6 to 7 minutes.
Remove to rack to cool.
When cool, spoon 1 teaspoon Orange Filling on half of the cookies.
Top with remaining cookies.
Decorate tops with additional Orange Filling, if desired.
