|Margarine||1⁄4 Cup (4 tbs), softened|
|Sugar||13 1⁄2 Tablespoon, divided (3/4 Cup Plus 1 1/2 Tablespoons)|
|Molasses||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Baking soda||2 Teaspoon|
|Ground cinnamon||1 3⁄4 Teaspoon, divided|
|Vegetable cooking spray||1|
Beat margarine at medium speed of an electric mixer until creamy; gradually add 3/4 cup sugar, beating well.
Add molasses and egg; beat well.
Combine flour, baking soda, salt, and 1 1/2 teaspoons ground cinnamon in a small bowl, stirring well.
Gradually add flour mixture to margarine mixture, beating until blended.
Cover dough, and chill 1 hour.
Combine remaining 1 1/2 tablespoons sugar and remaining 1/4 teaspoon ground cinnamon in a small bowl, and set aside.
Shape dough into 48 (1-inch) balls; roll balls in sugar mixture.
Place balls, 2 inches apart, on cookie sheets coated with cooking spray.
Bake at 350° for 8 minutes or until golden.
Cool slightly on cookie sheets.
Remove from cookie sheets, and cool completely on wire racks.
