Easy Lemon Cookies
|Shortening||1 Cup (16 tbs) (Part Butter)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Eggs||2 , well beaten|
|Grated lemon peel||1 1⁄2 Tablespoon|
|Vanilla extract||1 Teaspoon|
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Milk||3⁄4 Cup (12 tbs)|
|Oats||2 1⁄2 Cup (40 tbs), uncooked (Quick-Cooking Or Regular)|
Cream shortening until soft: gradually add sugar, creaming well.
Stir In beaten eggs, lemon peel and vanilla extract, beating well after each addition.
Combine flour, salt, baking powder and soda.
Add to creamed mixture alternately with milk.
Then add oats, mixing well.
Drop by teaspoonsful onto greased cookie sheets.
Bake at 375° for 10 to 12 minutes.
