Simple Coconut Macaroons
|Sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Flaked coconut||1 Cup (16 tbs)|
|Nuts||1⁄2 Cup (8 tbs), chopped|
Beat egg whites with salt until stiff but not dry.
Add sugar and vanilla extract.
Fold in coconut.
Line cookie sheets with brown paper.
Drop mixture by teaspoonsful onto paper.
Bake at 350° for 15 to 20 minutes.
When done, place cookie sheets on damp cloth for a few seconds.
Then take macaroons up immediately.
One-half cup chopped nuts maybe added, if desired.
