Raisin Oatmeal Refrigerator Cookies
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Grated lemon peel||1 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|All purpose flour||1 Cup (16 tbs)|
|Quick cooking oats/Regular, uncooked oats||1 1⁄2 Cup (24 tbs)|
|Dark seedless raisins||1 Cup (16 tbs), coarsely chopped|
Cream butter and sugars.
Add egg, lemon peel, molasses and vanilla extract.
Beat until light.
Add flour, soda, salt, oats and raisins.
Shape into a long, smooth roll about 2 1/2 inches in diameter.
Wrap in waxed paper and chill until roll is very firm.
Cut dough into 1/8 inch slices.
Place on ungreased cookie sheets and bake at 400° for 8 to 10 minutes.
