Almond Flavored Macaroons
|Whole almonds||8 Ounce (1 1/2 cups, blanched)|
|Powdered sugar||1 Cup (16 tbs), sifted|
|Almond extract||1⁄2 Teaspoon|
Finely chop almonds.
Combine almonds and powdered sugar.
Beat egg whites, vanilla, and almond extract till stiff peaks form.
Fold in almond mixture.
Drop by teaspoonfuls onto greased and floured cookie sheets.
Bake in 325° oven for 15 to 20 minutes or till lightly browned.
For crisper cookies, turn off oven; dry in oven with door open for 10 to 15 minutes.
