Lemon Km. Cookies
|Butter/Margarine||1 Cup (16 tbs)|
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Grated lemon peel||1 Teaspoon|
|Freshly squeezed lemon juice||1 Tablespoon|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Egg white||1 , slightly beaten|
|Chopped nuts||1 Cup (16 tbs)|
Cream butter, sugar, and egg yolk until light and fluffy.
Add salt, lemon peel, lemon juice, and flour: beat well.
Shape into finger like rolls or small walnut-size balls.
Dip in egg white and roll in nuts.
Bake on greased cookie sheets at 375° for 10 minutes.
