Cherry Cookie Crisp
|Pitted tart red cherries||1 Pound, pitted (1 Can, 2 Cups, Water Pack)|
|Lemon juice||1 Teaspoon|
|Red food coloring||1 Teaspoon|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Vanilla wafer crumbs||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄3 Cup (5.33 tbs), melted|
Drain cherries, reserving 2 tablespoons juice.
Mix cherries, reserved juice, lemon juice, and few drops food coloring.
Pour into 10 x 6 x 1 1/2-inch baking dish.
Mix sugar and cinnamon; sprinkle over.
Mix crumbs and butter; pat over cherries.
Bake in hot oven (400°) 25 minutes or till done.
