Whole Wheat Pineapple Cookies
|Margarine||1⁄2 Cup (8 tbs)|
|Granulated sugar replacement||2⁄3 Cup (10.67 tbs)|
|Granulated fructose||1⁄4 Cup (4 tbs)|
|Crushed pineapple in juice||1⁄4 Cup (4 tbs)|
|Pineapple flavor||1 Teaspoon|
|Whole wheat flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
Using an electric mixer, beat margarine, sugar replacement, fructose, egg, crushed pineapple, and pineapple flavoring until well blended.
In another bowl, mix flour and baking soda.
Gradually beat about two-thirds of the whole wheat mixture into the creamed mixture.
Stir in remaining flour until thoroughly mixed.
Shape into small patties, and place on ungreased cookie sheets.
Bake at 350°F (175°C) for 10 to 12 minutes.
Move to cooling racks.
