|Sugar||1⁄2 Cup (8 tbs)|
|Orange extract||1⁄2 Teaspoon|
|Cake flour||1 Cup (16 tbs), sifted|
|Butter||1⁄2 Cup (8 tbs), melted and cooled (1 Stick)|
Preheat oven to 375 degrees.
Butter and flour Madeline pan (or use Pam with flour).
In medium bowl, break eggs with a whisk.
Beat in sugar in a stream and add orange extract.
Beat by hand several minutes until frothy (or use mixer with whisk attachment.) Fold sifted flour into egg mixture, alternating with cooled butter.
Fill Madeline pan 2/3 full with batter.
Bake about 10 minutes; remove the Madelines immediately from pan to a cooling rack.
When cool dust with confectioner's sugar.
