Apricot Sandwich Cookies

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Warmed honey 1⁄2 Cup (8 tbs)
  Egg 1
  Buttermilk 1 Tablespoon
  Vanilla 1 Teaspoon
  Whole wheat pastry flour 2 Cup (32 tbs)
  Soda 1⁄2 Teaspoon
  Apricot filling 1⁄2 Cup (8 tbs)
Directions

Cream butter, honey, egg, buttermilk, and vanilla.
Mix flour and soda and add to creamed mixture, combining thoroughly.
Chill dough several hours.
Preheat oven to 350° F.
Drop dough by the slightly rounded teaspoonful about 2 inches apart, onto buttered baking sheet.
Flatten each cookie by pressing with a flat-bottomed glass covered with a damp cloth.
Bake 8 to 10 minutes.
Spread apricot filling on half the cookies and cover with another cookie.
Use about 1 teaspoon filling for each sandwich.
