|Diet margarine||1⁄4 Cup (4 tbs)|
|Granulated sugar replacement||1⁄3 Cup (5.33 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|All purpose flour||1 Cup (16 tbs), sifted|
1. Preheat oven to 350Â° F.
2. Using electric mixer at high speed, beat together diet margarine and sugar replacement in medium bowl until creamy; beat in egg and vanilla extract. With mixer at low speed, stir in sifted flour, cinnamon, ginger and salt; blend well.
3. Roll half of dough directly onto cookie sheet with nonstick finish to Ms-inch thickness. Cut into 2-inch cookies with a cutter. Remove surplus dough. Bake for 8 to 10 minutes. Cool cookies on cookie sheet for 2 minutes; remove to wire rack to cool completely. Repeat to use all dough.
