Old Fashioned Molasses Cookies
|Stone ground whole wheat flour||1 Cup (16 tbs) (Elam's Stone Ground 100% Variety)|
|Unbleached white flour with wheat germ||3⁄4 Cup (12 tbs) (Elam's)|
|Baking soda||1⁄2 Teaspoon|
|Soft shortening/Soft butter||1⁄2 Cup (8 tbs)|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
Combine and mix first 5 ingredients in bowl; reserve.
Beat shortening or butter until creamy.
Add brown sugar gradually; beat well after each addition.
Add egg and molasses; beat until smooth.
Blend in dry ingredients; mix well.
Chill dough 1-2 hours.
Shape dough into balls using a level Tbs. of dough for each.
Place balls 2 inches apart on ungreased baking sheets.
Bake in slow oven (325°F.) until done, 15- 18 minutes.
Transfer to wire racks to cool.
