Oatmeal Drop Cookies
|Stone ground 100% whole wheat flour||2 Cup (32 tbs) (Elam's)|
|Baking soda||1 Teaspoon|
|Steel cut oatmeal||2 Cup (32 tbs) (Elam's)|
|Soft shortening||1 Cup (16 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Milk||1⁄3 Cup (5.33 tbs)|
|Seedless raisins||1 Cup (16 tbs)|
|Chopped pecans/Walnuts||1 Cup (16 tbs)|
Combine and mix whole wheat flour, salt, soda and cinnamon.
Stir in oatmeal; reserve.
Beat shortening and sugar together until creamy.
Beat in egg and vanilla.
Add dry ingredients alternately with corn syrup and milk, blending well after each addition.
Stir in raisins and nuts.
Drop rounded tablespoonfuls of dough onto ungreased baking sheets.
Bake in moderate oven (350°F.) until done and brown, 12-14 minutes.
