Oatmeal Drop Cookies
|Brown sugar||1 1⁄4 Cup (20 tbs)|
|Safflower oil||1⁄2 Cup (8 tbs)|
|Unsulphured molasses||6 Tablespoon|
|Brown rice flour||3⁄4 Cup (12 tbs)|
|Ground cinnamon||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Rolled oats||2 Cup (32 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Chocolate chip||1 Cup (16 tbs)|
1. Preheat the oven to 400 degrees.
2. Cream the sugar with the oil until light and fluffy. Beat in the eggs and then the molasses.
3. Sift the rice flour with the cinnamon, baking soda, and salt and stir into the sugar mixture. Stir in the remaining ingredients. Drop by teaspoons onto an oiled baking sheet. Bake for 8 to 10 minutes, or until done. Cool on a wire rack.
