Microwave Peanut Brittle
|Peanuts||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|White corn syrup||1⁄2 Cup (8 tbs)|
|Baking soda||1 Teaspoon|
Stir together peanuts, sugar, syrup and salt in 1 1/2-quart casserole dish.
Cook 4 minutes on High.
Stir well and cook 4 minutes more on High.
Add butter and vanilla to syrup, blending well.
Cook 1 to 2 minutes more on High.
Peanuts will be lightly browned and syrup very hot.
Add baking soda and stir until light and foamy.
Pour mixture onto lightly greased cookie sheet.
When cool, break into small pieces.
