Orange Whole Wheat Cookies
|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Margarine||1 Cup (16 tbs)|
|Granulated sugar replacement||2⁄3 Cup (10.67 tbs)|
|Granulated fructose||1⁄3 Cup (5.33 tbs)|
|Grated orange rind||1 Teaspoon (Fresh)|
|Lemon peel||2 Teaspoon|
|Orange juice concentrate||1⁄4 Cup (4 tbs)|
Combine whole wheat flour, baking powder, baking soda, and salt in a sifter.
Sift together into a bowl.
Using an electric mixer, cream margarine.
Gradually add granulated sugar replacement and fructose.
Beat in orange rind and lemon peel.
Add eggs, one at a time, beating well after each addition.
Add flour mixture alternately with orange juice concentrate.
Beat until smooth.
Drop onto ungreased cookie sheet.
Bake at 350°F (175°C) until edges are brown and top feels firm to the touch.
Move to cooling racks.
