|Brown sugar replacement||2 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Vanilla extract||1 Teaspoon|
|Flour||1 1⁄2 Cup (24 tbs) (sifted)|
|Baking soda||1⁄2 Teaspoon|
|Cream of tartar||1⁄2 Teaspoon|
|Coconut||3⁄4 Cup (12 tbs), grated|
Cream together margarine and brown sugar replacement.
Beat in egg, water and vanilla until fluffy.
Add flour, baking soda and cream of tartar, beating until smooth.
Fold in coconut until completely blended.
Make round shape and greased cookie sheet.
Bake at 375°F (190°C) for 10 to 12 minutes.
