|Egg whites||2 (At Room Temperature)|
|Vanilla extract||1⁄4 Teaspoon|
|Sugar||1⁄4 Cup (4 tbs)|
|Macadamia nuts||7 Ounce, ground (1 Jar)|
1. In small bowl, with mixer at high speed, beat egg whites and vanilla until soft peaks form. Gradually sprinkle in sugar, beating until sugar completely dissolves and whites stand in stiff, glossy peaks. Fold in nuts.
2. Preheat oven to 325°F. Grease large cookie sheet. Drop mixture by tablespoonfuls, 1/2 inch apart, onto cookie sheet. Bake 20 minutes or until golden. Remove cookies to wire racks to cool. Store in tightly covered container.
