Pecan Refrigerator Cookies

Ingredients
  Shortening 1⁄4 Cup (4 tbs) (Soft)
  Granulated brown sugar replacement 1 Teaspoon
  Egg 1
  Vanilla extract 1⁄2 Teaspoon
  Broken pecans 2 Teaspoon
  Flour 1 Cup (16 tbs)
  Salt 1 Dash
  Baking powder 1 Teaspoon
  Water 2 Teaspoon
Directions

With electric mixer or food processor, cream together shortening and sugar replacement.
Add egg and beat well.
Add vanilla and pecans; mix slightly.
Add flour, salt, baking powder and water, mixing well.
Shape into a roll, 1 1/2 in. (3.75 cm) in diameter.
Wrap in plastic wrap or waxed paper and refrigerate overnight.
Cut into 1/4 in. (6 mm) thick slices and place on ungreased cookie sheet.
Bake at 375°F (190°C) for 8 to 10 minutes.
