|Shortening||2⁄3 Cup (10.67 tbs)|
|Packed brown sugar||1 1⁄3 Cup (21.33 tbs)|
|Eggs||2 , lightly beaten|
|Vanilla extract||1 1⁄2 Teaspoon|
|All purpose flour||1 2⁄3 Cup (26.67 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Salted peanuts||2 Cup (32 tbs)|
In a mixing bowl, cream shortening and sugar.
Beat in eggs and vanilla until light and fluffy.
Combine flour, baking soda and salt; gradually add to the creamed mixture.
Fold in peanuts.
Drop by tea-spoonfuls 2 in.apart onto greased baking sheets.
Bake at 350° for 10-12 minutes or until browned and almost set (centers will be soft).
Remove to a wire rack to cool.
