Basic Honey Cookies

Ingredients
  Butter 1⁄2 Cup (8 tbs), softened
  Honey 1⁄2 Cup (8 tbs)
  Egg 1
  Vanilla extract 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
  Whole wheat pastry flour 2 Cup (32 tbs)
  Egg white 1 , beaten
Directions

Butter 2 baking sheets.
In a large bowl, beat together butter and honey.
Beat in egg, vanilla, and lemon juice.
Sift flour into liquid ingredients, stirring to blend.
Form into a ball, wrap with plastic wrap, and chill in refrigerator for 1 hour.
Preheat oven to 350°F.
On a lightly floured surface, roll out dough to a 1/4-inch thickness.
With a cookie cutter or the top of a glass, cut dough into 2- to 2 1/2-inch rounds.
Brush with egg white.
Place on prepared sheets, and bake on middle shelf of oven for about 10 minutes, or until lightly browned.
