Diabetic Orange Cookies

Ingredients
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Sugar/Equivalent to sugar substitute 3⁄4 Cup (12 tbs)
  Grated orange peel 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground nutmeg 1⁄8 Teaspoon
  Margarine spread/70% vegetable oil 1⁄2 Cup (8 tbs)
  Chopped raisins 1⁄3 Cup (5.33 tbs)
  Egg substitute 1⁄4 Cup (4 tbs)
  Orange juice 2 Tablespoon
Directions

In a medium bowl, combine the first six ingredients; mix well.
Cut in margarine until mixture resembles coarse crumbs.
Stir in raisins.
Add egg substitute and orange juice; mix well.
Drop by tea-spoonfuls onto baking sheets coated with non stick cooking spray.
Flatten with a fork dipped in flour.
Bake at 375° for 13-15 minutes.
