Almond Meal Cookies
|Ground almonds||1 1⁄2 Cup (24 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Lemon rind||1 Teaspoon, grated|
In a bowl, blend all the ingredients together thoroughly.
Chill the dough in the refrigerator for about 2 hours.
Shape the dough into a cylinder 1 1/2 inches in diameter and cut into 1/4 inch thick slices.
Butter a cookie tin and cover with baking paper.
Butter the paper very generously.
Place the cookies well apart on the baking paper.
Let them stand 1 hour so the dough will dry out a little.
Bake the cookies in a preheated 350° oven for 20 minutes or until golden brown.
Carefully remove them from the baking paper and cool on wire racks.
