Classic Lemon Meltaway Cookies
|Butter/Margarine||1⁄4 Cup (4 tbs), softened (1/2 Stick)|
|Confectioner's sugar||1⁄4 Cup (4 tbs)|
|Grated lemon peel||1 Teaspoon|
|Lemon juice||1 Teaspoon|
|Vanilla extract||1⁄4 Teaspoon|
|All purpose flour||1⁄2 Cup (8 tbs)|
1. Combine butter, confectioners' sugar, lemon peel, lemon juice and vanilla extract in a small mixer bowl. Beat until fluffy. Beat in water. Combine flour, cornstarch and salt; add flour mixture gradually, beating until well mixed.
2. Drop mixture in 12 mounds on a round metal tray. Press pecan half on each cookie. Set aside.
