Soy Peanut Butter Cookies
|Oil||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
|Eggs||2 , slightly beaten|
|Peanut butter||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Pure vanilla extract||1 Teaspoon|
|Soy flour||1⁄2 Cup (8 tbs), sifted|
|Oat flour||1⁄2 Cup (8 tbs)|
|Skim milk powder||3⁄4 Cup (12 tbs)|
|Chopped roasted peanuts||3⁄4 Cup (12 tbs)|
Preheat oven to 350°F.
Mix oil, honey and molasses.
Add slightly beaten eggs.
Add peanut butter, blending well.
Then add water and vanilla.
Sift soy flour, oat flour, skim milk powder and salt.
Add dry ingredients to wet ones.
Add chopped peanuts, if desired.
Drop by teaspoonfuls onto lightly oiled cookie sheet.
Press flat by putting damp cloth over bottom of glass and using it to press the dough.
Bake in preheated oven for 15 minutes.
