Gingerbread Men Cookies

Ingredients
  Water 1⁄3 Cup (5.33 tbs)
  Shortening 1⁄2 Cup (8 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  All purpose flour 4 1⁄2 Cup (72 tbs)
  Baking soda 2 Teaspoon
  Salt 1 Pinch
  Ground ginger 1 1⁄2 Teaspoon
  Ground cinnamon 1 Teaspoon
  Molasses 1 1⁄2 Cup (24 tbs)
  Currants 2 Tablespoon (adjust quantity as needed)
Directions

Combine first 3 ingredients in a small saucepan.
Cook over medium heat, stirring constantly, until shortening melts.
Combine flour, soda, salt, ginger, and cinnamon; add shortening mixture, stirring well.
Stir in molasses; chill 8 hours.
Divide dough in half; store 1 portion in refrigerator.
Roll dough to Winch thickness on a lightly floured surface.
Cut with a 5 inch gingerbread man cut ter, and place on lightly greased cookie sheets.
Press currants into dough for eyes, nose, and mouth.
Bake at 350° for 10 minutes.
Cool cookies 2 minutes on cookie sheets; remove to wire racks, and cool completely.
Repeat procedure with remaining dough.
Store in airtight containers.
