The texture of these cookies are soft and tender- they are bursting with a rich chocolatey flavor, and, like my vanilla sugar cookie recipe, these melt in your mouth. Cocoa powder | 1 Cup (16 tbs) | |
Baking soda | 1/2 Teaspoon | |
Baking powder | 1/2 Teaspoon | |
Salt | 1/2 Teaspoon | |
Unsalted butter | 1 Cup (16 tbs) , softened | |
Granulated sugar | 1 Cup (16 tbs) | |
Eggs | 2 Large | |
Vanilla extract | 1 1/2 Teaspoon | |
Sprinkles | 1 Tablespoon (optional) | |
For icing: | ||
Cocoa powder | 1 Tablespoon | |
Powdered sugar | 1 Cup (16 tbs) | |
Melted butter | 2 Tablespoon | |
Milk | 5 Tablespoon | |
Vanilla extract | 1 Teaspoon (for vanilla icing) |
GETTING READY:
In a bowl, combine flour, cocoa, baking powder, baking soda, salt and mix well.
In another bowl, cream together sugar and butter. Add eggs, vanilla extract and mix well.
Add flour mixture and knead well to form a smooth dough.
Divide dough into two portions and wrap in cling film. Pop into refrigerator and chill the dough balls for 1 hour.
Preheat oven to 200°C.
Line baking sheets with parchment paper.
MAKING:
Roll the balls and using cookie cutters cut out shapes.
Place on baking sheets and pop into oven.
Bake for 4-6 minutes at 200°C.
For chocolate icing, combine cocoa and butter in a bowl. Add sugar, milk and mix well.
Spread on cooled cookies.
For vanilla icing, combine sugar, butter, milk and vanilla extract. Spread over cookies.
