Candy Cane Macaroons - Holiday Recipe

Get innovative this holiday season and surprise your family and friends with these vegan macaroons.

Ingredients

Dry ingredients
Unsweetened shredded coconut 2 Cup (32 tbs)
Almond meal 1/4 Cup (4 tbs)
Wet ingredients
Coconut oil/Coconut butter 2 Tablespoon
Vanilla extract 1 Teaspoon
Sea salt 1 Pinch
Agave nectar/Honey 1/2 Cup (8 tbs)
Optional additions
Chocolate chips 1/4 Cup (4 tbs) (Optional)
Peppermint candy 1/4 Cup (4 tbs) , crushed (Use organic) (Optional)

Directions

GETTING READY

1. Preheat your oven to 325F

MAKING

2. In a bowl, combine the dry ingredients and keep aside. 

3. In a separate bowl mix the wet ingredients well. 

4. Add the dry ingredients to the wet and combine to form a uniform mixture. In case the mixture is not sticking together add in some more agave or honey in order to bring them together. 

5. For the fun Holiday part, add either chocolate chips or crushed organic peppermint candy. 

6. Place 1 heaping tablespoon of the mixture at regular intervals on a tray lined with a cookie sheet. 

7. Place the cookies in the oven for 5-8 minutes or until they turn golden in colour. 

8. Take them out and allow them to cool for 5-10 mins before enjoying.

 

SERVING

9. Package them in festive wrappers and distibute among your friends.

Tip: You may use a cupcake baking liner to avoid mess.
