Stouffer's Oatmeal Macaroons
|Butter||1⁄2 Cup (8 tbs)|
|Quick-cooking rolled oats||1 Cup (16 tbs)|
|Sugar||10 Tablespoon (1/2 Cup Plus 2 Tablespoons)|
|Cake flour||1⁄4 Cup (4 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Egg||1 , beaten|
|Vanilla extract||1⁄2 Teaspoon|
|Chopped nuts||1⁄4 Cup (4 tbs)|
Melt butter in a 2-quart saucepan.
Stir in rolled oats and brown lightly over medium heat (3 to 4 minutes), stirring constantly; set aside to cool.
Blend sugar, flour, baking powder, and salt; stir into cooled oats.
Blend in egg and extract; beat thoroughly.
Stir in nuts.
Drop by rounded teaspoonfuls 3 inches apart onto lightly greased cookie sheets.
Bake at 360Â°F 10 to 12 minutes.
While still hot, transfer to wire rack.
