Huevos Rancheros With Cheddar Cheese

Huevos Rancheros is a tempting and simple dish. The flavors of this aroma of this wonderful breakfast will make your day! You just have to try this Huevos Rancheros recipe.
Ingredients
  Eggs 4
  Green pepper 1
  Pimientos 2 (Use Tinned Variety)
  Italian tomatoes 14 Ounce (Use Tinned Variety)
  Chili powder 2 Teaspoon
  Salt To Taste
  Black pepper To Taste
  Oregano leaves 20
  Onions 2 Medium
  Garlic 1 Clove (5 gm)
  Cumin 2 Pinch
  Mild cheddar cheese 1⁄4 Cup (4 tbs)
  Clarified butter 2 Tablespoon
Directions

Place clarified butter in frying pan and when hot add the garlic clove.
Allow garlic to sweat to release oil and then discard garlic, add the pepper strips and the onions toss in the butter and allow to fry gently.
Add the tomatoes and season with salt and pepper, the cumin, chili powder, and the oregano.
Cook until the mixture has thickened (about 2 minutes).
Place the vegetable mixture into a shallow oven dish make 4 hollows and break an egg into each.
Decorate eggs with slices of pimiento in crisscross fashion and cover the entire surface with cheese.
Bake in 450° F.oven for 7 1/2 minutes.
Serve immediately,
