Skate With Capers
|Onion||1 Large, sliced|
|Parsley||1 Tablespoon, chopped|
Cut the skate into pieces and place in a pan and cover with water.
Add vinegar, onion, mixed herbs and salt and pepper.
Bring to boil and simmer for 80 minutes.
Remove the fish, take out any bones, skin and keep^varm.
Sprinkle parsley, salt and pepper over the fish.
Melt about 2 tablespoons (40 g) butter in a pan and when browned but not burnt, pour it over the fish.
Meanwhile put the vinegar in a saucepan, add the capers and bring to boil and pour it over the fish.
This is nice served with boiled potatoes or rice and salad,
