Continental Cheese Pie
|Rolled soda cracker crumbs||2 Cup (32 tbs)|
|Softened butter||3 Tablespoon|
|Sliced onion||3 Cup (48 tbs)|
|Milk||1 1⁄4 Cup (20 tbs)|
|Grated cheddar cheese||1⁄4 Pound|
Blend 1 cup cracker crumbs with softened butter; line bottom and sides of a 9-inch pie plate.
Fry bacon until crisp; dra n on paper towel.
Drain off fat from pan.
Add onions to pan; saute until lightly brown.
Spread crumbled bacon and onions over crumb crust.
Stir small amount of scalded milk into eggs; return to milk.
Mix in half the grated cheese; heat until melted, stirring constantly.
Pour over onions.
Combine remaining cheese with remain- ing cracker crumbs; sprinkle over custard mixture.
Bake in 325-degree oven for 45 minutes or until knife inserted in center comes out clean.
Garnish with additional crumbled bacon, if desired.
